Ingredients
Salad
  • 1 15 oz can garbanzo beans rinsed and drained
  • 1 15 oz can cannellini beans rinsed and drained
  • 1 15 oz can kidney beans rinsed and drained
  • 1 15 oz can black beans rinsed and drained
  • 2 stalks of celery diced
  • ½ red onion diced
  • ½ cup orange or red pepper (or both) diced
  • 1 - 2 jalapeno seeded and finely diced (optional)
  • ½ cup fresh cilantro rough chopped
Dressing
  • 1/3 cup apple cider vinegar
  • 1/3 cup granulated sugar
  • 1/4 cup olive oil
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon black pepper
Method
  1. Drain and rinse the canned beans

  2. In a large bowl mix together the beans, celery, onion, pepper and cilantro.
  3. In a separate small bowl, whisk together the vinegar, sugar, olive oil, salt, and pepper.
  4. Add the dressing to the beans. Toss to coat.
  5. Chill salad in the refrigerator for several hours to allow the beans to absorb the flavor of the dressing. Serve cold.

This salad is so easy to make and always a hit.
