Smooth and creamy with a cool crunch, this avocado and cucumber dip is not your ordinary guacamole. Made with sour cream and ranch dressing, this dip is sure to be a crowd pleaser.
- 2 ripe avocados cut into small cubes
- 1 cucumber peeled & seeded, cut into small cubes
- 1 scallion finely sliced
- 1 Tablespoon lime juice
- 2 Tablespoons sour cream
- ¼ cup ranch dressing
- 1 teaspoon chili powder
- salt and pepper to taste
Cut the avocado into small cubes and toss with lime juice in a medium size mixing bowl to prevent avocado from turning brown.
Add cucumber and scallion.
Mix in sour cream and ranch dressing.
Refrigerate before serving.
For a creamier dip add more sour cream and ranch dressing
