The combination of flaked salmon, fresh dill, scallion, and Craisins create an explosion of flavors in this simple yet exciting salad. Salmon “Lana” (named for our dear Russian friend who created it) always sparks the attention of anyone who tastes it.
To Prepare Salmon “Lana” salad:
Cooks note: I prefer to use fresh salmon that has been grilled on a cedar plank, however canned salmon may also be used. Be aware that there is a big difference in canned salmon. and suggest that you use a good quality product for this dish.
- 8 oz cedar plank salmon, flaked
- 3 – 4 scallion, finely sliced
- 2 Tablespoons fresh dill, chopped
- ¼ cup Craisins, chopped
- ¼ cup slivered almonds (optional)
- toasted bread or water crackers
Combine the salmon, scallion, dill, Craisins, and almonds in a mixing bowl. Mix with just enough mayonnaise to completely coat the mixture. Chill well before serving.
