To prepare Olive Tapenade:
Cooks note: Traditional tapenade is made with anchovies, I have not included them here, however feel free to add if you want. This recipe is a spicy variation with the addition of red pepper.
- 1½ cups black olives, pitted
- ½ cup stuffed green olives
- 2 tablespoons capers
- 1 tablespoon garlic, minced
- 1 tablespoon fresh lemon juice
- 3 tablespoons olive oil
- 1 teaspoon red pepper flake (optional)
- baguette, sliced and toasted
Place all ingredients into a food processor and mix until paste like. Served on grilled or fresh bread. Tapenade also makes a wonderful spread in a cold cut sandwich.
